About this course

Halal certification sits at the junction of two demanding disciplines: a conformity assessment scheme with documented, auditable requirements, and a body of religious ruling the auditor must apply faithfully without assuming the role of a jurist. This course prepares experienced food-sector professionals to lead halal audits of abattoirs, manufacturing plants, central kitchens and logistics operations, using the UAE and Gulf framework — UAE.S 2055-1, UAE.S 2055-2, GSO 2055-1 and OIC/SMIIC 1:2019 — as the working reference.

It begins with the sources of halal ruling and why schemes legitimately differ, then maps the UAE scheme architecture of accreditation, certification bodies and a national mark. It then covers the technical substance you must verify: ingredient origin, including gelatine and enzymes; ethanol as ingredient, processing aid or residual carry-over; slaughter, including the contested question of stunning; najis and cleansing; segregation; labelling and traceability; and the halal assurance system. The final modules cover audit practice to ISO 19011:2018 — programme, planning, on-site conduct, nonconformity writing, reporting, the certification recommendation and auditor competence.

It is written for halal auditors, certification-body personnel, food safety managers preparing for certification, and consultants. Afterwards you will be able to plan and lead a halal audit end to end, judge ingredient and process evidence on its merits, and write findings that survive review.

Assessment is a 30-question online exam with a 70% pass mark, leading to a verifiable certificate. About 15 hours of self-paced study.
