About this course
ISO 22000:2018 is the international standard for food safety management systems, and clause 9.2 obliges every organisation operating one to audit itself at planned intervals. This course qualifies QA and food safety staff, production supervisors and HACCP team members to plan, conduct, report and follow up those audits — against clauses 4 to 10, on a live production floor, with findings precise enough to survive challenge from the process owner and from the certification body's auditor at the next surveillance visit.
The programme follows the order an internal auditor meets the standard. It begins with the Codex HACCP principles and how ISO 22000 restructures them, the two PDCA cycles, and the deliberate separation of organisational risk at clause 6.1 from food safety hazard at clause 8.5. It then works through context, leadership, planning and support, before taking clause 8 in detail: prerequisite programmes audited against ISO/TS 22002-1, traceability, emergency preparedness, hazard analysis and acceptable levels, validation of control measures, and the CCP versus OPRP distinction with its different critical limits, action criteria, monitoring, corrections and corrective actions. Verification and its analysis, control of nonconforming product, withdrawal and recall, and the performance-evaluation clauses follow. The final module covers the whole audit cycle to ISO 19011:2018 — programme, plan, checklist, opening meeting, interviewing operators, evidence from the floor and the records, nonconformity writing using problem–location–requirement, grading, the report, and verification that corrective action actually worked.
It is written for food manufacturing, catering and food service operations, with worked examples drawn from GCC plants and kitchens, and it explains FSSC 22000 accurately as ISO 22000 plus sector prerequisite programmes plus additional scheme requirements. The course is delivered online and self-paced, concludes with a 30-question final exam at a 70% pass mark, and awards a verifiable SKEDMIA certificate. Approximately 16 hours of study.
