About this course
ISO 22000:2018 replaced the 2005 edition and rebuilt the food safety management system standard on the Annex SL harmonised structure. The 2018 edition separates two Plan-Do-Check-Act cycles and two distinct levels of risk — organisational risk at clause 6.1, food safety hazard at clause 8.5 — and formalises the categorisation of control measures as CCPs or OPRPs. It is here that teams build weak systems and auditors write findings that do not survive review. This course is built around those distinctions.
The programme works through clauses 4 to 10 in the order an auditor meets them: context, leadership and the food safety team; planning, objectives and change; support and documented information; prerequisite programmes assessed against ISO/TS 22002-1; traceability and emergency preparedness; hazard analysis, acceptable levels and hazard assessment; control measure categorisation and the hazard control plan; validation at 8.5.3 and verification at 8.8; withdrawal and recall at 8.9; and performance evaluation. The Codex seven principles are mapped onto the ISO clause numbering.
It is written for food safety and QA managers, consultants and practising auditors in food manufacturing, catering and food service, with attention to GCC regulatory expectations. The final third covers lead auditor practice under ISO 19011:2018 and ISO/TS 22003-1:2022 — audit-time determination, sampling across categories and shifts, Stage 1 and Stage 2, testing the evidence behind a claimed CCP, grading findings and the certification recommendation — and sets out accurately how FSSC 22000 relates to ISO 22000.
Assessment is a 30-question online examination with a 70% pass mark, leading to a verifiable certificate. Approximately 16 hours of self-paced study.
